Abstract A processed food product, especially an ice cream, a whipping cream, a cheese spread, cheese slices, a flavoured milk drink or a meringue which has been stabilised and/or thickened by incorporation therein of at least one glucomannan, preferably a glucomannan derived from the Amorphophallus species.
