Abstract @ Foodstuffs containing sweetness inhibitors having the general formula: wherein R 7 is selected from the group consisting of hydrogen and C 1 -C 3 alkyl, R. is selected from the group consisting of hydrogen and C 1 -C 3 alkyl and wherein R 9 is the group wherein R 2 , R 3 , R 4 , R. and R 4 are independently selected from the group consisting of hydrogen, C 1 -C 3 alkyl, C 1 -C 3 alkoxy, C 1 -C 2 hydroxyalkyl, hydroxy and COOH; and the non-toxic salts thereof. Disclosed is also a process for inhibiting the sweetness perception of a foodstuff.
