Abstract
Abstract Prodn. of amylose is effected by (a) treating a starch soln. with an alpha-1,6-glucosidase under conditions such that the DE remains below 2, (b) treating the soln. with alpha-amylase for a short time under conditions such that the DE remains below 5, and (c) pptg. long-chain amylose (LCA) from the soln. and opt. then pptg. short-chain amylose (SCA).
