Abstract
Abstract Novel isoascorbic acid phosphates and salts thereof, useful as antioxidants, are prepared by phosphorylating 5,6-Oloweralkylidene isoascorbic acid. Also, antioxidant compositions and methods of inhibiting oxidation in preserved foods and beverages are included.
