Abstract

Abstract An improved process produces protein hydrolysates in greater yields and having better taste than has heretofore been possible. According to a preferred embodiment of this process, a protein is initially heat treated at alkaline pH to condition the protein. The protein is then reacted first at alkaline pH with an alkaline microbial protease and then at neutral pH with a plant enzyme and a neutral microbial protease. The resultant hydrolysate can be winterized, clarified, flash concentrated and dried to produce a bland, clear, acid and heat stable protein supplement for foods.
