Abstract

Abstract Process for producing a slush comestible concentrate wherein a noncrystallizing saccharide mixture is converted into a concentrate that is spoonable and dispersable at 0*F. in water, milk or whiskey forms large water ice crystals and 35-50% overrun during the crystallizing process, cellulose gum being used to reduce phase separation of the slush concentrate and impart desired organoleptic qualities.
