Abstract A FOOD PRODUCT HAVING A GEL-FORMING MATERIAL ON ITS SURFACE IS EXPOSED TO A GELATION AGENT THEREBY FORMING A CONTINUOUS SKIN WHICH ENVELOPS THE FOOD PRODUCT. AN EXCESS OF GELATIN AGENT IS EMPLOYED SO THAT A RESIDUE IS LEFT ON THE SKIN. THE SKIN-ENVELOPED PRODUCT IS THEN COATED WITH A FLUID BATTER CONTAINING A GEL-FORMING MATERIAL. THE RESIDUE GELATION AGENT AND THE GEL-FORMING MATERIAL WITHIN THE BATTER REACT TO FORM AN ADDITIONAL GEL STRUCTURE.
